In winter, the opposite logic applies. If your kitchen is very dry — forced-air heating pulls a lot of moisture out of the air — bumping hydration up slightly keeps the culture from drying out around the edges and developing an off character.
Reading Your Starter Like a Seasonal Thermometer
Once you've baked through a full calendar year, your starter becomes something genuinely useful beyond just leavening bread. It becomes a real-time indicator of your kitchen's fermentation conditions.
If your starter is peaking in 3 hours or less, your kitchen is running hot — adjust accordingly.
